義大利蛋白霜 Italian Meringue

材料 Ingredients
蛋白 Egg white3 個 ea
檸檬汁 Lemon juice2 小匙 tsp
白糖 Granulated sugar4 大匙 Tbs
水 Water2 大匙 Tbs
義大利蛋白霜圖片


做法
1.將糖和水放進小鍋裡煮到糖完全融化,並冒大泡泡。
2.把蛋白放進一個乾淨未沾到油脂或水的盆裡,用中低速打成泡沫狀,加入檸檬汁繼續用高速打成軟性發泡。再慢慢加入步驟1糖漿打成硬性發泡。打好的蛋白霜放進冰箱冷藏。



PROCEDURE
1.Place the sugar and water in a small pan and cook until the sugar is completely dissolved and the syrup is bubbling.
2.Place the egg whites in a clean bowl and whisk in medium-low speed until foamy. Add the lemon juice and continue to beat in high speed until soft peaks form. Gradually add the syrup and beat in high speed until stiff peaks form. Store the meringue in the fridge.
